Most vineyards around the world, develop win in lines along trellises, but in Santorini the production is different. The vines develop in tight clusters, stuffed near the earth along the stones, as though looking for as much shelter as they can get from the solid gusts of ocean air. It is this ocean air, alongside the dirt that is rich in volcanic powder that gives the reviving sharpness for which the wine has turned out to be so notable. Numerous think that it is this volcanic ash that permits the grapes developed on Santorini to hold their sharpness.
